Oven-baked salmon with vegetables

Ingredients (for 4 persons)

4 skinless salmon fillets (fresh or thawed)
1 yellow onion, peeled and sliced
1 red onion, peeled and sliced
1 carrot, cut into julienne
½ yellow pepper, sliced
½ red pepper, sliced
½ stalk of leek, sliced
3 cloves of garlic, peeled and sliced
A drizzle of white wine
A drizzle of olive oil
Salt and freshly ground black pepper for seasoning
4 tablespoons flavored breadcrumbs (optional)
Mashed potatoes and spinach salad for serving (optional)

Instructions

Coat a large pan or cast iron skillet with the olive oil and let it heat up.
Add the onions and let it cook until soft. Then add the sliced garlic and let it sauté well.
Add the julienned carrots, the peppers, and the leek.
Season with salt and pepper and let it sauté.
When the vegetables start to soften, refresh with a drizzle of white wine, cover the pan and let it cook until they are al dente or to the point you like best. If the vegetables are drying out, you can add a splash of water.
Keep tasting and adjusting the seasonings.

Meanwhile, turn the oven on to 180°C.
Transfer the vegetables to a baking tray. Spread them evenly and place the salmon fillets on top.
Spread the breadcrumbs over the fillets and bake for about 10-15 minutes – just enough to cook the salmon and brown the breadcrumbs.

For a more substantial meal, serve it with mashed potatoes and a green salad.
