Ingredients (makes 20)

1 rectangular sheet of fresh puff pastry
50 g to 75 g cooking chocolate, chopped or coarsely grated
Powdered sugar to finish

Palmiers de chocolate

Method

Preheat the oven to 200 ºC.
Line two baking trays with greaseproof paper.

Unroll the puff pastry and spread the chopped or grated chocolate over the pastry.

With the puff pastry facing you horizontally, start folding it inwards symmetrically from the edges, making folds of about 2 cm until the folds reach the centre of the pastry.
Bring the folds together, then overlap them.

If you’re making it in advance, wrap it in greaseproof paper or film and chill it in the fridge for about 30 minutes so that it’s easier to slice.Unroll and cut into slices about 1 cm wide.
Spread the slices on the baking trays, with the cut side of the dough facing upwards.

Bake for about 15-20 minutes.
Once out of the oven, leave to cool slightly.

Serve the palmiers warm, dusted with icing sugar.

Tip: you can replace the chocolate with a chocolate spread like Nutella, covering the entire surface generously.
