Ingredients (serves 10 – 12 estrelas)
1 rectangular sheet of fresh puff pastry
10 to 12 slices of chèvre cheese
1 red onion, medium ( thinly sliced)
1 tbsp brown sugar
1 tsp balsamic vinegar
1 drizzle of olive oil
Salt and black pepper to taste
1 egg for brushing
Rosemary sprigs for garnish

Method
Heat the olive oil in a deep pan. Add the red onion and let it brown a little.
Add the brown sugar and balsamic vinegar.
Season with salt and pepper and cook slowly until the onion is soft and glossy. If the onion is drying out, add a few drops of water.
Check the seasoning and remove it from the heat.
Preheat the oven to 200ºC.
Unroll the puff pastry and cut out the stars with a biscuit cutter.
Lay the stars on a baking tray lined with greaseproof paper, well separated.
Cut the cheese into slices about 0.5 cm thick and place each slice in the centre of each star.
Using the tip of a knife, lightly score the pastry around the slice of cheese.
Brush the pastry with the beaten egg and bake for 10 minutes (or until they’re nicely puffed and golden).
Remove from the oven.
Spread a little caramelised onion on top of each slice of cheese. Decorate with rosemary sprigs and serve on a Christmas platter.
