Ingredients (serves 6)

½ butter pumpkin (medium size)
4 apples
30 g + 90 g cold butter
30 g + 80 g brown sugar
25 g + 60 g plain flour
100 g rolled oats
2 cinnamon sticks
Ground cardamom seeds optional
A pinch of cinnamon powder
A drizzle of lemon juice

Method

Preheat the oven to 180 ºC.

Wash and dice the apples. Drizzle with lemon juice so they don’t oxidise.
Peel the pumpkin, remove the seeds and dice into small cubes.

Mix the apple, pumpkin, 30g of sugar, 25g of flour and 30g of butter in small pieces in a baking tray.
Add the cinnamon sticks and the ground cardamom seeds (optional).
Mix everything and bake in the oven for about 30 minutes or until the fruit is tender.

For the crumble: in a large bowl, combine the oat flakes, 65g of flour, 80g of brown sugar, 90g of very cold butter and a good pinch of cinnamon powder.
Using your fingertips, mix until the mixture resembles rough sand.

Remove the baking tray from the heat and divide the fruit into small baking moulds.
Spread a layer of crumble on top.

Cook for about 25 minutes or until the crumble is golden and crispy and the fruit is bubbling.

Remove from the heat.

Serve warm or cold, ideally with a scoop of vanilla ice cream or a spoonful of unsweetened whipped cream.
